Student cookbook: Leftover pasta salad

It's easy to cook too much pasta and it happens almost every time. Here's how to rescue it for lunch the next day if you do. Ideally catch the pasta before it forms a soggy lump in the colander, but otherwise rinse it with boiling water then refresh it with cold water. Add some finely chopped onion or spring onions, a bit of chopped ham, some cooked frozen broad beans or peas and a dollop each of mayo and yoghurt or sour cream. Season with salt, pepper and a little lemon juice. A bit of chopped parsley or chives wouldn't go amiss.
