Student cookbook: Bolos de coco
Sounds more exotic than coconut balls. A simple Portuguese recipe anyone can make, even if you've never baked in your life before. Serves: 20-24 bolos Cooking time: 15 mins 250g desiccated coconut 250g granulated sugar 3 large free range eggs, beaten Finely grated rind of an orange or lemon, preferably unwaxed 25g self-raising flour, plus a little for dusting the baking tins Oil for greasing the baking tins 2 x 12 cup bun/small muffin tins Preheat the oven to 220C/gas 7. Grease the tins with lightly oiled kitchen paper and sprinkle with flour, shaking off any excess. Mix the coconut and sugar in a large mixing bowl then pour in the beaten eggs. Add the citrus rind, then mix in the flour. Put heaped tbsps of the mixture in the bun tins and bake for 10-12 minutes until the cakes are browned and just firm. Leave them for 5 minutes before removing gently from the tins. Serve straight away while still warm.
