Student cookbook: Quick passion fruit pavlovas

These pavlovas look and taste really special, but you can rustle them up in just a couple of minutes. Serves: 2 Cooking time: 5 mins 2 ready-prepared meringue nests 2 ripe passion fruit, pulped 1 tbsp orange juice 1 tsp sugar 1 tub vanilla ice-cream Meringue nests are great for an instant pudding and you can buy them at any supermarket (though the best ones come from Marks & Spencer). Scoop the pulp from the passion fruit, mix it with the orange juice and sweeten it to taste with a little sugar. Put a couple of scoops of ice-cream in each meringue nest and spoon the sauce over the top. Tip: A great alternative is to top the ice-cream with berries and a raspberry sauce made by blending fresh or frozen raspberries with a little icing sugar.
